Roasted Chicken/Frango Assado No Forno

Servings: 5 to 6

Ingredients
  

  • One chicken cut into pieces can also be done with just chicken breast or chicken thighs
  • 1 large onion
  • 1 red pepper
  • 2-3 cloves of garlic
  • 4 medium potatoes peeled and cut into quarters
  • 2 tsp of sea salt
  • 1 to 2 tsp of paprika
  • ground pepper
  • 2 tbsp of olive oil
  • 1/2 cup white wine
  • 2 bay leaves

Method
 

  1. In a large roasting dish add sliced onion, chicken, chopped red pepper, chopped garlic and potatoes.
  2. Add bay leaves then sprinkle with salt, paprika and pepper.
  3. Drizzle with olive oil and the white wine.
  4. Place in 400 degree oven until chicken is cooked through.
  5. Turn chicken pieces 2 to 3 times during cooking and drizzle with sauce.

Notes

Update: You can also add carrots, celery and parsley to this dish. When the chicken is almost cooked toss in 1 to 2 bags of peeled roasted chestnuts just to warm up. We love chestnuts so at our house I use at least two 100g bags.
