Roasted Chicken/Frango Assado No Forno

Servings 5 to 6

Ingredients
  

  • One chicken cut into pieces can also be done with just chicken breast or chicken thighs
  • 1 large onion
  • 1 red pepper
  • 2-3 cloves of garlic
  • 4 medium potatoes peeled and cut into quarters
  • 2 tsp of sea salt
  • 1 to 2 tsp of paprika
  • ground pepper
  • 2 tbsp of olive oil
  • 1/2 cup white wine
  • 2 bay leaves

Instructions
 

  • In a large roasting dish add sliced onion, chicken, chopped red pepper, chopped garlic and potatoes.
  • Add bay leaves then sprinkle with salt, paprika and pepper.
  • Drizzle with olive oil and the white wine.
  • Place in 400 degree oven until chicken is cooked through.
  • Turn chicken pieces 2 to 3 times during cooking and drizzle with sauce.

Notes

Update: You can also add carrots, celery and parsley to this dish. When the chicken is almost cooked toss in 1 to 2 bags of peeled roasted chestnuts just to warm up. We love chestnuts so at our house I use at least two 100g bags.
