Portuguese Rice Cake…XL bolo de arroz

Ingredients
  

  • 6 medium eggs separate the whites from the yolks
  • 60 gr of butter at room temperature (1/4 cup)
  • 150 gr sugar 2/3 cup
  • 1 shot of whisky
  • 150 gr rice flour 1/2 cup plus 1/3 cup
  • 1 tsp baking powder

Method
 

  1. Preheat oven to 350 degrees
  2. Butter and flour a loaf pan
  3. Beat egg whites in a separate bowl until firm
  4. In a second bowl, beat butter and sugar for 3 minutes, adding one egg yolk at a time while mixing well
  5. Add whisky, mixing it in
  6. Mix flour with baking powder and add to batter
  7. Beat in 1/4 of the egg whites to form a smooth bater
  8. Finally, slowly fold in remaining egg whites
  9. Pour bater into prepared pan and sprinkle with sugar
  10. place in oven for 40 to 45 minutes, use a toothpick to verify that is is baked
  11. Remove from oven and allow to cool completely
  12. Serve slices sprinkled with sugar
