Add canola oil to large pot, just enough to barely cover the bottom. Then add the chopped onion and garlic, stir for a few minutes.
Add the chourico and continue cooking until slightly browned.
Add the meat and continue to stir until it starts to brown, add some drops of water if it begins to stick to the pot. Add salt and pepper at this time.
Once it is brown add enough water to just cover the meat and cook until the meat is tender. The timing will depend on the quality and cut of meat you are using.
Once the meat is tender/cooked add the cubed potatoes and carrots, then add just enough water to barely cover the vegetables. Too much water and your stew will not be nice and thick.
When the stew starts to boil add the peas and corn as they do not take as long to cook as the other vegetables.
Continue cooking on medium/low until all carrots and potatoes are soft.
