I didn't but that might be a good idea. I don't put too much water at first as I want the meat to brown, I let it cook until tender then add more water with the vegetables. If I happen to add too much water and want to thicken the sauce I remove a few tablespoons of the liquid, dissolve some flour in it and return it to the pot to thicken the sauce.
When you added the beef, I'm seeing a white residue around the inside of pot: Did you dredge beef in flour before you added it to pot? I'm asking because, that's a good idea: It will help to thicken-up gravy in stew.

I had to laugh when I saw your comment that you don't use exact measurements. My daughter now lives in California and will often contact me for my recipes. She gets a little upset with me because I can't give her exact measurements. By the way, this looks delicious.
