Carne Guisada/ Portuguese Beef Stew

Beef Stew/ Carne Guisada was a popular meal in our home when I was growing up and it is now one of my kids favorite meals. My daughters who are away at University still request it every time they come home. This is my Mom’s recipe and our cooking has never had exact measurements so these measurements are just an estimate. You can add more or less of any of the ingredients depending on your tastes.

Ingredients
  

  • Canola oil
  • 1 medium onion chopped
  • 2 cloves of garlic minced
  • 1 pound of stewing beef you can also make this with pork or chicken
  • 1/4 to 1/2 of chourico sausage
  • 3 large chopped carrots
  • 1 cup of peas
  • 1 cup of corn optional
  • 4 large potatoes cut into cubes
  • water
  • Sea salt
  • pepper

Method
 

  1. Add canola oil to large pot, just enough to barely cover the bottom. Then add the chopped onion and garlic, stir for a few minutes.
  2. Add the chourico and continue cooking until slightly browned.
  3. Add the meat and continue to stir until it starts to brown, add some drops of water if it begins to stick to the pot. Add salt and pepper at this time.
  4. Once it is brown add enough water to just cover the meat and cook until the meat is tender. The timing will depend on the quality and cut of meat you are using.
  5. Once the meat is tender/cooked add the cubed potatoes and carrots, then add just enough water to barely cover the vegetables. Too much water and your stew will not be nice and thick.
  6. When the stew starts to boil add the peas and corn as they do not take as long to cook as the other vegetables.
  7. Continue cooking on medium/low until all carrots and potatoes are soft.

Once the meat is tender/cooked add the cubed potatoes, carrots then add just enough water to cover the vegetables. Too much water and your stew will not be nice and thick.
I wait until the stew starts to boil to add the peas and corn as they do not take as long to cook as the other vegetables.Continue cooking on medium/low until all carrots and potatoes are soft.
Serve right out of the pot with crusty bread for dipping.

  1. I didn't but that might be a good idea. I don't put too much water at first as I want the meat to brown, I let it cook until tender then add more water with the vegetables. If I happen to add too much water and want to thicken the sauce I remove a few tablespoons of the liquid, dissolve some flour in it and return it to the pot to thicken the sauce.

  2. When you added the beef, I'm seeing a white residue around the inside of pot: Did you dredge beef in flour before you added it to pot? I'm asking because, that's a good idea: It will help to thicken-up gravy in stew.

  5. Thanks!! I know, sometimes it can be frustrating especially when people ask you for the recipe but that is how I was brought up. My mother never really measured anything and my mother-in-law who is a great cook and I have learned a lot from never measures either. Thanks again for coming by 🙂

  6. I had to laugh when I saw your comment that you don't use exact measurements. My daughter now lives in California and will often contact me for my recipes. She gets a little upset with me because I can't give her exact measurements. By the way, this looks delicious.
