A couple of weeks ago while I was scrolling through Instagram, I saw this fantastic recipe I wanted to try. These bolinhos de laranja, or orange mini-cakes, are absolutely delicious and so easy to make. Here is the link to the original recipe by A Pimenta Rosa.
My family really enjoyed this recipe. Some said it reminded them of a soft Jaffa cake without the chocolate. If you enjoy a good jaffa cake, it may be worth drizzling some chocolate on these cupcakes. If you try it, let us know how they come out!
Bolinhos de Laranja Recipe
Ingredients
- 2 eggs
- 125 grams of sugar
- Zest of one orange
- Juice of one orange
- 100 grams of plain flour
- 1 tsp of baking powder
- 100 grams butter, melted
- Sugar for sprinkling
Ingredients
- Preheat the oven to 180°C (350°F)
- In a bowl, mix the eggs, sugar, butter, orange zest, flour, orange juice, and baking powder until well combined
- Grease molds with butter and sprinkle with sugar (I used muffin tins)
- Fill cupcake tins halfway
- Bake for 13 minutes (check with toothpick)
- Once the cakes are baked, turn off the oven
- Sprinkle sugar on top and leave them in the oven for an additional 2 minutes
- Remove from oven and allow to cool
Bolinhos de Laranja
