Update: You can also add carrots, celery and parsley to this dish. When the chicken is almost cooked toss in 1 to 2 bags of peeled roasted chestnuts just to warm up. We love chestnuts so at our house I use at least two 100g bags.
Ingredients
- One chicken cut into pieces (can also be done with just chicken breast or chicken thighs)
- 1 large onion
- 1 red pepper
- 2-3 cloves of garlic
- 4 medium potatoes( peeled and cut into quarters)
- 2 tsp of sea salt
- 1 to 2 tsp of paprika
- ground pepper
- 2 tbsp of olive oil
- 1/2 cup white wine
- 2 bay leaves
Instructions
- In a large roasting dish add sliced onion, chicken, chopped red pepper, chopped garlic and potatoes.
- Add bay leaves then sprinkle with salt, paprika and pepper.
- Drizzle with olive oil and the white wine.
- Place in 400 degree oven until chicken is cooked through.
- Turn chicken pieces 2 to 3 times during cooking and drizzle with sauce.

Did this dish last night. Followed the recipe. It was a huge hit with everyone. Simply delicious. Will definitely do it again but will add carrots, etc. minus the chestnuts.
Hi Olga, I use the peeled roasted chestnut from Aurora. There are other brands but I like these the best. For a whole chicken I use 2 bags. I fins them at the Portuguese grocery store but also Highland Farms and Loblaws. Not sure if they have those stores in your area. Just google the name so you can see the package. Thanks!

Thanks Amanda, I make it quite often. The family loves it. I also add vegetables such as celery, carrots and now chestnuts. I add the chestnuts that are precooked near the end so they roast just until warm.
