I fell in love with baking as a child. I was the one in the family that made all the desserts for the Holidays.
I have passed on the love of baking to my girls and now they get super excited when it is time to make our Christmas cookies.
These Whipped Shortbread cookies are simple to make and freeze beautifully.
If you have a cookie press you can use it to make the cookies in different shapes, like these small Christmas trees and stars …or simply roll the dough into small balls and press with a fork. You can decorate the cookies before baking with sprinkles or candies.
Recipe:
1 cup butter, softened (250ml)
1/2 cup icing sugar (125ml)
1 1/2 cups all-purpose flour (375ml)
1/2 cup cornstarch (125ml
In a bowl, beat butter until fluffy. Beat in icing sugar (2 tbsp at a time) until light and fluffy.
Sift together flour and cornstarch; stir into butter mixture 1/3 at a time until you have a smooth dough.
Place teaspoon size balls 1 inch apart onto a parchment paper lined baking sheet, press cookies with floured fork to flatten or place dough in a cookie press to make cookies.
Decorate cookies with sprinkles and bake in a 300 degree oven until firm. 20 to 25 minutes, bottoms will brown lightly but do not let tops brown.
Cool cookies and store in airtight container or layer between waxed paper and freeze.
