Pineapple Pecan Cake

Everyone calls this the “Easiest Pineapple Cake”…and it sure is! It is all done in one bowl and it has a cream cheese frosting that is divine. Make sure to frost the cake while it is still hot so that some of the frosting melts into the cake. Recipe:  2 cups of sugar 2 eggs 2 cups all purpose flour 1 tsp of baking soda 1 tsp of vanilla pinch of salt 20 oz of crushed pineapple in it’s own juice, do not drain 1 cup chopped pecans Preheat oven to 350 degrees. Grease a 9×13 inch pan and set aside. In a large bowl, mix all the ingredients until well combined, ending with the chopped pecans. Pour batter into the greased pan and bake for 35 to 45 minutes. Top will be golden brown. Cream Cheese Frosting: 1/2 cup of butter (softened) 8 oz cream cheese (softened) 1 tsp of vanilla 1 1/2 cup of confectioners sugar (powdered sugar) Beat butter, cream cheese, vanilla and sugar in a medium bowl until creamy.  Spread frosting over cake while it is still warm.
