Apple Walnut Cake

I found this old recipe for Apple Walnut Cake that I started making as a teenager. I can’t remember the last time I baked it but it was over 20 years ago…my girls don’t remember ever trying it.

It was as delicious as I remember…moist on the inside and crispy on the outside.

Apple Walnut Cake
Ingredients:
2 cups flour
2 cups granulated sugar
2 tsps baking soda
½ tsp of cinnamon
½ cup oil
4 eggs
1 tsp vanilla
5 cups finely chopped and peeled apples
2 cups finely chopped walnuts
Fine dried breadcrumbs (optional)
Icing sugar (optional)
Preheat oven to 350 degrees. In large bowl of mixer combine eggs, sugar, flour, baking soda, cinnamon, oil, and vanilla. Beat at medium speed until well mixed. Stir in apple and walnut pieces. Turn into well-greased 12 cup fluted tube pan that has been coated with breadcrumbs. Bake for 60 minutes or until pick inserted in cake comes out clean. Cool in pan for 10 minutes, turn out to cool completely then sprinkle with icing sugar. Don’t forget to pin it!
